Easy chicken enchiladas

Recept je bio inspirisan jednim receptom Buddy-ja Valastra aka The Kitchen boss-a. Naravno, ovo je mnogo laganija letnja varijacija recepta za meksičke enchilade od njegove 🙂

The recipe was inspired by Buddy Valestro aka The Kitchen boss. Of course, this is a lot lighter summer variation of the recipe for mexican enchiladas than his 🙂

Potrebno vam je:

400g pilećih grudi
6 tortilja
1 pavlaka
1 krastavac
2 veća paradajza
šolja kukuruza
nekoliko listova zelene salate
pola ljute papričice
1 limun
100 gr sira (parmezan, gauda)
10 kašičica susama
bosiljak
peršun
so
maslinovo ulje

Pileće grudi iseći na sitne komade. Posoliti ih, posuti bosiljkom i propržiti na maslinovom ulju. Odvojeno prepeći susam. U vatrostalnu činiju sipati pavlaku i posuti malo peršuna na nju. Preko staviti isprženu piletinu, pa je preliti prepečenim susamom. Potom poređati obareni kukuruz, pa narendani sir. Peći na 200 C dok sir ne porumeni. Napraviti salatu od sitno seckane zelene salate, paradajza, papričice i krastavca. Posuti je limunom. Tortilje iseći na četvrtine i ispeći ih u rerni. Servirati tako što se na jednu četvrtinu tortilje stavi smesa sa mesom, pa potom salata. Prekriti durgom četvrtinom tortilje. Prijatno!

You will need:
400g chicken breasts
6 tortillas
1 sour cream
1 cucumber
2 tomatoes
1 cup of boiled corn
a few leaves of lettuce
a half of jalapeno
1 lemon
100g cheese (gauda, parmesano)
10 spoons of sesame
basil
persley
salt/pepper
olive oil
Cut chicken breasts into small pieces. Put salt and basil on them, and fry it in olive oil. Separately fry sesame a little bit. In a baking dish put sour cream and sprinkle it with parsley. Then, cover it with fryed chicken, which you cover with sesame. After that a layer of boiled corn, and at the end – grated cheese. Bake it on 200 C until the cheese turn brown. In the meantime make a salad from tomatoes, cucumber, jalapeno and lettuce, which you sprinkled with a lemon. Cut tortillas into quarters and bake it in the oven a little bit. Serve it like this: one quarter of tortilla, meat mixture, a bit of salad, another quarter of tortilla. Bon appetit!
