Are you also a lover of this fruit/vegetable? If not in the kitchen, then at least in eating its seeds. Or its calving for Halloween. This product offers so much.
Yet somehow I was resisting it for so long. I liked its seed from a long time ago, but its culinary possibilities i was avoiding for some reason. I still remember vividly mom`s or grandma`s sad face when I say No to their question “will you eat my pumpkin pie?”. Mom also used to bake the slices of pumpkin, and then to sprinkle honey and cinnamon over it. The whole house was filled with that pleasant smell, so in the end I had to try it. And, I didn`t like it much… Simply, my reaction was “so and so”…
And then one day I tried mom`s pumpkin soup. With potatoes and thyme. Mom said “thyme goes excellently with pumpkin”. And it really was like that. I was delighted with the soup. And then I tried a similar one in the restaurant. They served it in a real pumpkin instead of a bowl. Man, what a sight that was!
And the most beautiful soup of course was my own, which I made in my kitchen. And then once more, and once more.. It was all of natural ingredients. Refreshing. Real heavenly delight for cold winter days. And then once I add baked spelt bread from my mom to that pumpkin lunch, on whose hot slices I spreaded butter. And then salted it… And the lunch was complete!

Slice up a pumpkin and potatoes. Fry onion in olive oil, and then add potatoes and pumpkin to it. Add small amount of thyme. Pour water to cover the vegetables. When it`s boiled, mix it in blender. Put it back into the water, and add a bit more, according to taste. Add thyme, salt and pepper. When all the ingredients mix well, your soup is ready.
Yes, I know. It`s very hard to make this speciality. But, easily, you can do it.
PS – Do you consider pumpkin a fruit or a vegetable?
